Gems Oreo cookie bars require just seven ingredients besides the cooking equipment – a spatula and an 8-inch square baking tin. You will need melted butter, an egg, brown sugar, vanilla extract, all-purpose flour (maida), Oreo cookies, and Cadbury Gems. These cakey and chewy cookie bars are great for kiddie sleepovers, or as treats when during the holidays.
What is a cookie bar? A cookie bar is simply an American style dessert bar with the firmness of a cookie but a texture which is cakey. Cookie bars are immensely popular during the holiday season but are consumed all through the year. There is an endless variety of dessert bars such as cheesecake bars, chocolate chunk bars, lemon curd bar, Biscoff bars, coconut bars, and all of these can be made in a variety of combinations and flavours. In the US, cookie bar premixes are also available, but there is greater joy in making them from scratch using a cookie bar recipe at home. The bonus being you get to choose the flavour and let your imagination go wild.
How to make the best Gems Oreo cookie bar:
It is necessary that you line your tin well with a buttered baking paper or preferably foil as it prevents the cookie bars from sticking to the bottom. If you don’t have brown sugar you can use white sugar but we suggest that you use brown sugar at least once to make this recipe as it gives the cookie bars the desired chewiness and a lovely flavour. You could also use Smarties or M&Ms in place of Gems buttons if you have those.
Do not over whisk the cookie bar batter or your bars will turn out hard and extra chewy.
How do you know when a cookie bar is done? Bake the cookie bars until you see the edges are pulling away slightly from the pan. The top of the cookie bar should be light golden brown when done. The best way to know if the cookie bar is done is to insert a toothpick in the center of the bar and take it out. You know it’s done when the toothpick should come out just slightly moist Remove the pan from the oven and leave it to cool on the counter for a minimum of 20 minutes before unmoulding it and removing the foil. Cut into squares or rectangles.

RECIPE
INGREDIENTS
1⁄2 cup butter, melted
1 egg, large
1 cup brown sugar, packed
1 teaspoon vanilla extract
1 cup all-purpose flour (maida)
12 oreo cookies
1⁄2 cup cadbury gems
COOKING METHOD
- Preheat oven to 180 degrees Celsius. Cover a small square pan around 8” with foil and butter it well.
- Pour the butter into a mixing bowl. Once cooled, add the egg and whisk. Continue to whisk vigorously while adding in the brown sugar and vanilla extract. Whisk for about 1 minute more
- Add half the all-purpose flour, stirring to combine. Add the other half till just mixed. Do not stir too much as this will result in tough cookie bars.
- Spoon ¼ or more of the batter into the pan, using the back of a spoon or a spatula to spread it across the bottom till it evenly coats the pan. Place Oreos, whole, on the batter at the bottom of the pan, filling spaces, if any, with Oreos broken in half, till evenly covered.
- Slather the remaining batter over the top and between the Oreos till completely covered and the Oreos are no longer visible.
- Top the batter with Cadbury Gems, placing them so they are evenly spread. Press them down with your finger or spatula so they are slightly embedded in the batter.
- Place the pan in the preheated oven and bake for 18 to 20 minutes till the edges pull away slightly from the pan and the top of the cookie bar is golden and lightly browned. An inserted toothpick should come out slightly moist. Set aside to cool before cutting into squares and serving.
Yield: 12 cookie bar squares or rectangles
